(Company)">Amico&amp;Co</a>, highlighted by a May 2021 conversation between Alberto Amico and Matteo Cozzani, Toti's chief of staff, who is now under house arrest. Yet the galley kitchens onboard can, in some cases, be afterthoughts for yacht designers. Enter Brennan Dates, a sought-after superyacht chef with over two decades of experience working on superyachts he has accumulated a know-how when it comes to galley designs, including must-have essentials. I thrive and respect the work that goes into these charter seasons, each set of guests want a different type of service and food requirement which keeps things exciting. This is where I began to think about galley designs and amenities when catering for different clientele.<img src="https://photo-assets.superyachttimes.com/photo/311009/image/large-5af8fa386560169e1ee4ab4fa98415a6.jpeg" data-gid="gid://syiq/Photo/311009">What inspired you to turn your experience onboard into a career in design?I’m not going to tell you it was some sort of epiphany moment by any means. It took a few ebbs and flows over the years into the top end of the industry where I realised that all of the service areas of 90% of new-builds are being designed and built by people that have never worked in the hospitality industry. Very few of the designers building galleys are ex-crew members. Once I recognised this issue and paired it with the poorly designed galleys I’ve worked in, I saw a gap in the market and founded <a data-gid="gid://syiq/Company/7686" href="#managed-by-system" rel="noopener noreferrer" target="_blank" title="Superyacht Galley Designs (Company)">Superyacht Galley Designs</a>.In retrospect It isn’t just galleys suffering when it comes to design. There are also small and impractical pantries I’ve seen while listening to the service staff complain about bad layouts and not enough space. This is when I decided to start my own business. We’ll make sure service areas are protected and outfitted by professional crew during a build, while at the same time pushing a refit down the line by two to three years. This saves the yacht owner money in the long run while positively impacting the guest experience.<img src="https://photo-assets.superyachttimes.com/photo/311011/image/large-0799295a4239acf90fc6505137c5557e.jpg" data-gid="gid://syiq/Photo/311011">Can you share some of the challenges you faced while working in superyacht galleys and how your designs work to overcome them?Problems in the galley design are often around space and lack of proximity. Ideally, wherever the guests eat the galley should realistically be on the same deck - this is great for temperature-controlled delicate food. Another challenge is the hours, ideally if you fit out the galley with the right equipment it can speed up certain tasks immensely.&nbsp;How does your involvement improve the build or refit process onboard?By building a galley from scratch you can install top end equipment that will require little maintenance, ensure less breakdowns, and push back a refit by 2 to 5 years. For example, a galley kitted out with Miele or other domestic appliances is not going to suffice for the constant high-quality food required onboard so ensuring to use industrial brands such as Rational ovens, EGO cook tops, Hobart dishwashers and Liebherr fridges and freezers this will save money in the long run and ultimately prevent any failures during guest trips. Domestic appliances were not designed to feed 30 people three times a day; they break down and negatively impact the guest experience. In my opinion, the busiest spaces on the boat deserve the highest quality equipment and should be designed by people with experience working within that environment.<img src="https://photo-assets.superyachttimes.com/photo/311013/image/large-79d1021e142b49b976320353b47715cb.png" data-gid="gid://syiq/Photo/311013">Can you share some of the projects you have worked on during your design and consultancy career?The recently launched 84-metre Feadship, Obsidian has gotten a lot of good reviews from the build team, owner’s team and crew. I also design the galley for the 100-metre <a data-gid="gid://syiq/Company/29" href="#managed-by-system" rel="noopener noreferrer" target="_blank" title="Feadship (Company)">Feadship</a> superyacht <a data-gid="gid://syiq/Yacht/6409" href="#managed-by-system" rel="noopener noreferrer" target="_blank" title="Moonrise99.95m (327'11&quot;)Feadship2020">Moonrise</a>. I was proud that this design was replicated on the <a data-gid="gid://syiq/Company/6651" href="#managed-by-system" rel="noopener noreferrer" target="_blank" title="ShadowCAT (Company)">Shadowcat</a>, <a data-gid="gid://syiq/Yacht/9237" href="#managed-by-system" rel="noopener noreferrer" target="_blank" title="Nebula68.2m (223'9&quot;)Astilleros Armon2022">Nebula</a> and then again on Moonrise 2. My first design has been repeated twice since I initially drew it. I think that says a lot about having a chef design galleys versus companies with experience designing these very unique spaces. There is a new 140m in the water this year that I’m proud of and I’m in the initial design phase of another 140m+.<img src="https://photo-assets.superyachttimes.com/photo/205225/image/large-6dc826418d9254ba1d52f4a29faf6bdb.jpg" data-gid="gid://syiq/Photo/205225">Do you find that owners/shipyards recognise the importance of crew areas and has this changed during your career?Yes. I believe when a yacht owner has owned multiple yachts they become very aware of the need for enhanced service areas. With spacious and efficient service spaces you will have quicker more efficient service times and a smaller turnover of staff, which ultimately keeps the owner happy. Strangely, shows like Below Deck have helped showcase the lack of space and amenities for crew onboard, which I think has had a positive impact when crafting crew spaces today. &nbsp;I’ve seen so many instances where the service areas get ignored until the last minute of a build.&nbsp;I also notice how guests are coming into the galley more and more. You, of course, have guests who are foodies who want to see, smell and interact with those of us making the food they are about to eat. The small craft market is particularly affected, with expected contractions impacting various product segments, especially in certain regions. Factors contributing to this downturn include rising interest rates and restricted credit access."He added, "It is precisely in this scenario that the consolidation and expansion of the Genoa International Boat Show becomes even more critical. I regret to see several comments in the press questioning the value of public funds allocated to this event, the second largest industry event in Italy after the Salone del Mobile Milano and the third largest worldwide in the yachting sector. WHF designs and manufactures interior home furnishings in the Mission and Craftsman styles utilising reclaimed barn wood, leather, copper and steel. We sell to furniture dealers, interior designers, hospitality and residential and offer full custom options.&nbsp;In 2009, we were creating custom furniture pieces for a residential remodel in Utah while working with an interior design firm. They had an existing Jupe style table that they wanted to incorporate into the design, but it had warped making it non-functional. Additionally, the circle is a universal symbol of totality and&nbsp;wholeness that creates movement towards unity and equitable relationships. In its mechanism, the Lotus table expands on a locking carousel, meaning that you can open and close the table from one place instead of having to walk around and unfold each section in situ. First you pull each pie out and unfold each leaf, then push the leaf into the centre and then each pie to lock it all in place.
